Being a surfer myself I reckon you will have a good time on the Gnu or the Machete rather than a cambered board especially in powder, I can only imagine the fun you can have on a rockered board on big open rollers, I think I'm starting to drool somewhat. I don't think that the usual weakness of a rockered board where it gets a little weird at speed is going to be a problem at all in powder and it's strengths will be impossible to beat.
I have a Lib Banana and a T Rice and I reckon I would be really interested to try both on a good powder day but I wouldn't even take my old camber board, I haven't touched it since I got the banana actually.
As far as setback goes, I rode my Banana on a heliboard day in NZ and didn't touch the bindings (mine are centred at about 22.5" wide 15, -15) and it went awesome both natural and switch.
